Sweat the onion and celery in the butter until soft, not brown (about 10 mins.).
Remove from heat, add apples, chestnuts, sage, lemon zest, breadcrumbs and egg.
Season very well, mix thoroughly and leave to cool.
Spread the chestnut stuffing mix into the centre of a sheet of foil and roll tightly into a log using the foil. Secure the ends by twisting the foil.
Bake in a preheated oven 180°C for about 20 minutes.
Allow to cool slightly before slicing.
